We have a great Salad from Glenda.
Pea - Cashew - Bacon Salad
1 box or bag Frozen Baby Peas, Thaw, rinse in cold water and drain well - do not cook them!
1 cup chopped celery
1/2 cup chopped green onions 1 cup sour cream
1/2 cup (or more) crisp bacon, crumbled**
1/2 - 1 cup salted cashew nuts
Mix everything together EXCEPT bacon and cashews and refrigerate.
About 15 -20 minutes before serving, add the bacon and cashews.
**Recently, I used Jimmy Dean already cooked bacon and just warmed it per instructions; crumb, refrigerator until time to add to the salad and it turned out very good and a lot less effort and time.
